  • Blue Point: These come from the cool waters of Fisher Island. Blue Points are wild-caught, bringing a perfect balance of medium salinity and a crisp body. The finish? Earthy and mineral-rich – a classic for a reason. 
  • Island Creek: Straight out of Duxbury Bay, MA, these farmed oysters are packed with flavor. They’ve got a strong brine, a buttery body, and a long, sweet finish. Island Creeks are for those who appreciate a richer, more complex seafood experience.
  • Wellfleet: From Wellfleet Harbor, MA, these farmed oysters bring a bold, sharp salinity. They’re plump with a seaweed finish, offering a taste that’s both bold and satisfying. If you’re into a more intense flavor, Wellfleets are your jam.
  • Moonstone: These are farmed in Blue Island No.9 and they’re all about that briny punch. Moonstones have a crisp, firm texture with a refreshing finish, making them perfect for those who like their oysters with a bite.
